Ingredients

A selection of Burnbrae Farms Egg Patty- Natural Egg, Fried Egg, Omelets and Hard Boiled Eggs
Breakfast Proteins
Maple Sausage Patty, Double-smoked strip Bacon, peameal bacon, sliced striploin steak, mini sausage link, sliced country ham.
Breads and carriers (served warmed)
Sourdough toast (grilled), English Muffin, brioche slider buns, mini bagels, corn tortilla, cheese croissant, buttermilk biscuit, mini Belgian waffle, glazed yeast ring donut.
Cheese
sliced cheddar, a quarter wedge of brie, pepper jack, Herb and garlic Cream Cheese
Spreads and sauces
Hummus, Apple Butter, Strawberry Jam, ketchup, maple syrup or maple butter, hollandaise or béarnaise, pesto Mayo, pico de gallo, caramelized onion jam (or balsamic bacon onion jam)
Garnishes
ripe avocado (or Guacamole), Roma tomato, Persian cucumber, blend of flavorful salad greens (spinach, baby kale, radicchio, arugula), grilled peaches, roasted mushrooms.
Condiments
Lemon Wedge, hot/chili sauce, Everything but the Bagel Seasoning, flakey sea salt, Pepper grinder, olive oil, black and white sesame seeds

Directions

  1. Arrange Hot items (Eggs, bacon, etc ) together on a warmed cast iron skillet or serving platter and place under a heat lamp for service, along with warmed breads and carriers.
  2. On a large charcuterie board, group together cheese, garnishes and then place condiments in small ramekins. Sauces and spreads can be placed in squeeze bottles or ramekins. Ensure the look of all the serving dishes is cohesive and serve with small wooden spoons and spreaders.

Tips

  • Smokehouse Ketchup: 2 parts Ketchup to 1 part BBQ sauce with a dash of chipotle sauce or seasoning.
  • All Dressed Sauce: 3 parts Garlic Aioli to 1 part each prepared mustard, Ketchup, BBQ Sauce and chopped dill pickle
  • Bloody Mary Sauce: 3 parts Ketchup, 1 part Horseradish mayo, a dash of celery salt and hot sauce, spritz of lemon.
