Directions
- Arrange rice in a serving bowl; top with edamame, cabbage, carrot, peppers and quartered eggs. Drizzle with vinaigrette and garnish with cilantro and sesame seeds.
Tips
- Replace the Asian vinaigrette with sweet Thai chili sauce.
- Brown rice can be replaced with cooked quinoa, barley, farro or couscous.
- For a lunchtime make ahead: layer the ingredients into a re-sealable container or Mason jar in the order given. Refrigerate for up to 2 days.
