Directions
- Arrange barley in a serving bowl; top with chickpeas, spinach, cucumber, tomatoes and Dill eggs. Drizzle with tzatziki sauce and garnish with dill and pumpkin seeds.
Tips
- Replace the tzatziki sauce with creamy cucumber or ranch-style salad dressing.
